Gluten Free Apple Cake

Dry Ingredients:

1 Cup Almond Flour (not almond meal which is too grainy for this cake)

1 Cup Tapioca Flour or Arrowroot Starch

1/8 Tsp Salt

1/2 Tsp Baking Powder

1/2 Tsp Baking Soda

1 Tsp Cinnamon


Wet:

1/2 Cup Applesauce

3 Eggs

1/4 Cup Melted Coconut Oil

1 TspVanilla

1/3 Cup Maple Syrup

1 Medium Apple (your choice of variety) peeled, cored and chopped into 1/4” chunks


Preheat oven to 375 degrees Farenheit. Whisk all dry ingredients together to incorporate. In a separate bowl whisk all wet ingredients. Using a spatula incorporate the wet into dry ingredients until all lumps disappear. Pour mix into a greased 8” x 8” pan and bake in preheated oven for 20-23 minutes. Test with toothpick at 20 minutes and remove from oven once cake does not stick to toothpick.  This apple cake is best enjoyed right away but can keep in the fridge for a week. Reheat and enjoy! cake
