Ok this salad is hot AND cold simultaneously. After testing we decided that the garlicky and crisp base deserved a warm and welcoming layer. Kind of like a briny and calcium rich Walmart greeter :) Seriously, the pan frying mellows out the red onion and olives and brings out the best in the Halloumi. Next best thing to a trip to the Med.
