For Dressing:
1/4 Cup Olive Oil
1/2 Tsp Lemon Zest (Zest from approximately 1/2 a lemon)
1Tsp Lemon Juice
1/4 Tsp Maple Syrup
1 Garlic Clove Crushed
1 Tsp Grainy Mustard
For Salad:
1 Bunch Locarno Kale stems removed
1 Romaine Heart
2 Persian Cucumbers
1 Small Apple, core removed (a sweet variety works well here- Gala, Spartan etc)
1/2 Cup Roasted Hazelnuts
1 Avocado
1/2 Cup Shredded or Grated Parmesan
Mix all dressing ingredients together. Rough chop all of the salad ingredients and add to a large salad bowl. Add dressing and Parmesan and mix well fully incorporating dressing. Serves 2 as main or 4 sides
