1 Cup pitted dates (soaked in 1 cup of boiling water for 15-20 minutes then drained)
2/3 Cup Almond Flour
1 Tbs Hemp seeds
1/4 Cup raw sunflower seeds
1 Tbs Shredded unsweetened coconut
1/2 Tsp vanilla
1/3 Cup raw cacao (plus more for rolling the balls in)
Place all of the ingredients in a food processor or a high speed blender and blend until a ball forms. Take 1 inch chunks and roll into balls and then roll in remaining cacao. Makes approximately 10-11 balls. These protein balls can be enjoyed immediately or stored in the refrigerator for 2 weeks.
