TANDOORI CAULIFLOWER

1 Large Head of Cauliflower (or 2 small)
1/2 Cup of Greek Yogurt
2 Tbs Garlic (4 cloves crushed)

1 Tbs Ginger (1” section peeled and grated)
1.5 Tsp Chili Powder
1.5 Tsp Coriander

1/2 Tsp Salt
1 Tsp Turmeric
2 Tbs Lemon Juice

*Fresh Lemon Wedges and chopped Cilantro for serving*


Chop Cauliflower into 2-3 inch florets. Mix all other ingredients in large bowl. Add the cauliflower to bowl and mix thoroughly. Let marinate in refrigerator for at least 6 hours (but best to marinate overnight). Cook at 400 degrees Fahrenheit in preheated oven for 45 min (no need to turn during cooking). Best served hot with fresh squeezed lemon and cilantro. To make it a meal add rice and Raita. Serves 4
