1 Large Acorn Squash- Seeded and Cut into 3/4” cubes
1 Chipotle Pepper Marinated in Adobo Sauce (And a Tbs. of sauce minced)
2 Tbs. of Garlic Crushed (approximately 4 cloves)
1/4 Cup of Orange Juice
1 Tbs. Orange zest
1/2 Tsp. Salt
In a large mixing bowl combine all prepared ingredients and mix well. For best flavour let marinate in fridge for at least 4 hours (up to 24 hours). Bake at 400 degrees Fahrenheit for 35- 40 minutes turning over in pan midway through baking. Best served over rice with Jalapeño Hummus or Cilantro Mint Sauce (or both). This nutritious squash recipe serves 4 and can keep well in the fridge for 3-4 days.
